Outside in stitched 360 video7166

I would like to set up an outside in stitched 360 video. Basically what I would like to do is set up a small portion of a martial arts gym and get multiple cameras alighned around the focal point. Focal point is going to be where the instructor/student is doing a move. This way we can stop the video at anytime and analize the technique from multiple angles.

I am sure this is possible but I can't find any resources online. I might be searching for it wrong. Can someone help me out?

Are there examples of these type of videos out there? What software can I use? How difficult and expensive is it to set up something like this (if anyone has any experience with it.)
