So, I am rocking older M1 hardware with no issues ~ The Studio is my Daily driver that $2500 budget would get you a new M3 Macbook Pro I'd suggest at least 1TB of storage & 16GB of Ram which can be done for $1,700 Refurbish from Apple.

More RAM is always better in my opinion ~ That said Macs are pretty efficient with Ram and would believe that a Mac w/16GB would be on par if not slightly out preform a PC with 32GB of RAM

I have been in the Mac space going back to the PowerPC and MacClone days I had a Radius 81/110

@GlennTremain

Not a problem any of the M-series Macs will be a good machine ~ Personally, I'd suggest at least 16GB of RAM and look for 1TB or more of storage. Which is more than doable within your budget

Picking up OWC's OWC miniStack STX allows you to add some more storage if needed it takes a 2.5" Sata drive & a NVMe M.2 SSD

Are you open to an option of getting a desktop?
You can get much more in hardware if it is a desktop vs a laptop.

When I got my 3D desktop that came with RTX 3060(12GB) and AMD 7950X(quite a fast processor) I did it only for learning and doing stuff in Blender 3D. However it saved me a lot of time on just photo processing.
My everyday desktop is Lenovo S30 with nothing extraordinary does stitching and HDR in PTGUI in minutes while my 3D desktop does it in seconds, Gigapixel on the 3D machine does jobs in seconds while it takes a few minutes on the Lenovo one.
And even with Blender and the 3D machine it takes very fast to render. I have done a tutorial recently with rendering results in animation. RTX 3060 is very cheap now but it has rendered 72 frames of these two animation clips in 2K in less than 4-5 minutes.
I tried Lenovo S30 with Blender and I could not even dream of such speeds there. Most of the time it just crashes while you are modeling or switching to viewport.

I bought it more than a year ago and it was a custom built. It costed me AU$3000 which was less than $2000 in USD. They should be even cheaper now.
