I've seen similar videos (both 360 and regular FOV) made by placing the camera on an extendable pole (up to 30') (see Mike Ty video on the Insta360 3 Meter Extended Selfie Stick). Additional smoothness can be achieved with a DSLR or iPhone by mounting it on a gimbal on the pole.
