Depending on if I’m doing a window pull, I shoot two to three exposures of those three one is a flash shot. I do my color corrections in Lightroom Classic, then export the photos as layers in photoshop, then blend the flash /ambient photos. Raw gives you more flexibility with exposure and color than jpeg

The Sun will be still/already below horizon. If it is just for internal scans and in order to eliminate overexposed windows it will be much more than 27 minutes gap. Except for tweaking color temp, the HDR process is giving you as much dynamic range that RAW will, so shooting in-camera JPEG will alleviate a lot of storage issues.
